“Quickly Pickled Seasonal Vegetables”

Ingredients (8 servings)
2 turnips
1/2 cucumber
10g carrot
1/4 apple
5g fresh ginger
white sesame seeds

Seasonings
1 tsp salt
1/4 cup rice vinegar
1 tsp mirin (sweet rice wine)
1 tsp sugar
10 cc water

Method
 Peel turnips.  Cut into half lengthwise and slice. Cut stems and leaves of turnips into 2~3cm pieces. Cut cucumber in half lengthwise and then into thin diagonal slices. Cut carrot and ginger into fine strips. Cut apple into arch-shaped without peeling.
 Put all vegetables in a container for pickles and pour mixed seasonings.
 Drain and serve in a bowl.  Sprinkle with sesame seeds.
